Soya chunks pulao in pressure cooker
***************************************

Servings – 2 to 3 people
Ingredients list
* * * * * * * * * *

1 cup basmati rice – soak 20 mins before using
1.75 cups water to cook ( ಒಂದು ಮುಕ್ಕಾಲು ಅಳತೆ ನೀರು)

If you are using sona masoori rice then use rice and water in 1: 2.25 ratio. ( ಎರಡು ಕಾಲು ಲೋಟ ಅಳತೆ ನೀರು )

1 cup blanched soya chunks ( cook in hot water for a minute, drain and squeeze the water)

For marinating
****************
1 and half tbsp coriander powder
12 tsp garam masala
12 tsp red chilli powder
14th cup mint leaves
14th tsp turmeric
12 tsp pepper powder
2 cardamoms
1 inch cinnamon stick
5 tbsp curd
2 tbsp oil
Salt as required
3 tbsp fried onion slices + 2 tbsp for garnishing
2 tbsp coriander leaves for garnishing

Kodo millet Pulao / araka (siridhanya) pulav

Servings – 3 to 4 people

Ingredients list

1 and half cups Kodo millet / araka ( use millets of your choice)
3 cups water
Salt as required
3 tbsp oil
2 bay leaves

Carrot – 1
Potato – 1
Beans – 15 nos
Fried Onions – 4 tbsp
Green peas – 12 cup
(use vegetables of your choice)

Pulao masala
12 cup grated fresh/desiccated coconut
Green chillies – 2 (according to your taste buds)
12 onion
Garlic – 2 cloves
Ginger – 1 inch piece
Cloves – 3 nos
Cinnamon – 1 inch piece
kapok bud (marathi moggu) – 1
Green cardamom – 1
Fresh coriander leaves – handful
Fresh mint leaves – handful
Water to blend

14th cup moong dal / split green gram / hesaru bele

12 carrot
1 potato
1 big or 2 small tomatoes
14th cup green peas
12 cup microgreen kale leaves – optional
1 and quarter tbsp coriander powder
12 tbsp red chili powder
12 tbsp garam masala
14th tsp turmeric
2 tbsp oil or ghee
12 tsp cumin seeds
1 tsp kasoori methi / dried fenugreek leaves
2.5 cups water
Salt as required

Coconut-mustard masala rice / kaayi saasive chitranna

Coriander leaves Chopped

Masala
34th cup grated fresh or desiccated coconut
5 dry red chillies
5 to 6 curry leaves
14th tsp turmeric
12 tsp roasted mustard seeds
1 tbsp cumin seeds
lemon sized tamarind
Water to grind

Tempering
3 tbsp oil
14th tsp mustard seeds
1 tsp channa dal / bengal gram
2 to 3 tbsp peanuts
Few curry leaves
2 dry red chillies
