HYDERABADI MASALA CHICKEN CURRY:

Ingredients:

– Chicken with bones – 750 gms
– Onion – 5 big (2 to fry & 3 for the curry)
– Curd – 2-3 tbsp
– Ginger garlic paste – 1 tbsp
– Turmeric powder – ½ tsp
– Coriander powder – 3 tbsp
– Red chilli powder – 2 ½ tbsp
– Ghee – 1 tbsp
– Lemon juice – 1 lemon
– Mint leaves – ¾ cup chopped
– Coriander leaves – 1 cup chopped
– Oil – 3-4 tbsp

MALVANI CHICKEN CURRY:

Malvani Spice Mix Powder:
– Sankeshwari Dried Red Chillies – 15-20
– Fennel seeds – 2 tbsp
– Khus Khus – 2 tbsp
– Coriander seeds – 1 tbsp
– Cinnamon – 1
– Cloves – 10-12
– Peppercorns – 12-15
– Black cardamom (Badi Elaichi) – ½ pod
– Star Anise – 2
– Dagdi Phool/ Pathar Phool (Black stone flower) – 2 tsp
– Bay leaf – 2

Malvani Paste:
– Onions (sliced) – 4
– Coconut (dried) – Half
– Garlic – 10-12
– Ginger – ½ inch

To Cook:
– Oil – 3 tbsp
– Cloves- a few
– Cinnamon – 2
– Star Anise – 2
– Pepper – a few
– Bay leaf – 2
– Onion (finely chopped) – 1
– Turmeric – ½ tsp
– Salt – to taste
– Coriander – garnish

METHI MURG CHICKEN

Marination:
– Chicken – 1Grams
– Yogurt – 400 Grams
– Salt – to taste
– Kasuri Methi (Dry) – 4 tbsp

To Cook:
– Oil – 4 tbsp
– Cinnamon – 2
– Bay Leaves – 2
– Cardamom (Small) – 2
– Cardamom (Big) – 2
– Mace (Javitri) – 1
– Onions (Finely Chopped) – 3
– Methi (Chopped) – 1 ½ to 2 cups
– Garlic (Chopped) – 6
– Ginger (Chopped) – An inch
– Turmeric powder – 2 tsp
– Red chilli powder – 2 to 3 tbsp
– Coriander powder – 2 tbsp
– Green chillies – 3 or 4
– Water
