Lunch Recipes for Good Friday/Kanji,jack fruit curry and Pickle Learn how to make jack fruit curry ,Kanji for Good Friday lunch. Raw jack fruit is cooked, fresh crushed coconut is added and seasoned with shallots,mustard,curry leaves in fresh coconut oil. Serve chakka kuzhachathu with Rice porridge and tender mango pickle,Perfect Good Friday Lunch……
All you need
matta rice 1 cup
water 3 cups
salt
Method
Cook rice with salt and water.
Chakka Kuzhachathu
raw jackfruit chopped 3 cups
salt
water 1/2 cup
turmeric 1/2 tsp
grated coconut 1 cup
shallots 5
garlic 5
green chilly 3
salt
turmeric 1/2 tsp
coconut oil 1 tbsp
mustard 1/2 tsp
sliced shallots 5
curry leaves
green chilly 1
Method
Cook jack fruit with salt,water and turmeric. Mash the cooked jack fruit well. Crush coconut with garlic, shallots,chilly salt and turmeric. Add this crushed coconut to mashed jack fruit. Cover and cook for 2 minutes. Remove it from fire. Heat another pan, temper mustard in coconut oil. Add shallots and saute till brown. Add chakka and saute well. Finish it with curry leaves and chilly.
