ORZO PASTA SALAD:
1 box of orzo
1/4 cup lemon juice
1/2 cup olive oil
1/2 tsp Dijon mustard
Roasted veggies (I used zucchini, squash, bell peppers, corn, olive oil)
Salt + Pepper
-Cook pasta according to box directions – cook completely.
-Roasted your veggies with olive oil and salt and pepper until tender – cool completely.
-Make dressing by combining lemon juice, olive oil, mustard, garlic, salt and pepper. You can also add honey to taste if you prefer. Mix in a blender or whisk by hand.
-Add dressing, fresh basil, and veggies to orzo and refrigerate for at least an hour.
JALEPENO BACON BAKED BEANS
6-8 strips bacon
28oz can of baked beans
1 Yellow onion
3 jalapeños (keep seeds and membranes for more heat, use bell pepper for no heat)
3 tablespoons brown sugar
2 tablespoons ketchup
1 tablespoon Dijon mustard
1 tablespoon maple syrup
1 teaspoon apple cider vinegar
Pinch cayenne pepper
Cook bacon + remove to a paper towel
Cook chopped onion and jalapeño in bacon grease
Add brown sugar, ketchup, mustard, syrup, peppers, vinegar, and beans mix well.
Transfer to a baking dish and and top with cooked bacon.
Cook on low and slow 325 for 1-2 hours.
Baked beans with caramelize and thicken.
