5 lazy summer breakfast ideas to help you make breakfast fast! Vegan, healthy, and meal-prep friendly recipes! Smoothie Popsicles: 0:48. English Muffin:2:32. Caprese Toasts:3:50. Easy Tomato Sandwich:5:27. Pancake Muffins: 6:23. Recipes below 🙂

— Summery Smoothie Breakfast Pops
makes 12 popsicles

1 cup frozen peaches (or mango)
1/2 cup frozen strawberries
1/2 cup frozen cauliflower rice
1/2 cup chopped frozen zucchini
1/2 large frozen banana
2 cups water
the juice of 1/2 a lemon
1/2 cup unsweetened vegan yogurt
3 tablespoons maple syrup

Combine all of the ingredients in a larger blender and blend until very smooth. Transfer to popsicle molds and freeze overnight.

— Note: If you have a smaller blender you may need to blend this in two batches. I used the extra large attachment when making this because it makes a lot of of smoothie!

— Easy Vegan Pancake Muffins
makes 12 pancakes

1 cup unsweetened soy milk
1/2 tsp apple cider vinegar

1.25 cups quick cooking oats
2 tsp baking powder
1/4 tsp sea salt

1/4 cup apple sauce
2 tbsp coconut sugar
1/2 tsp vanilla

Preheat oven to 350 degrees.

In a bowl, combine the soy milk and apple cider vinegar. Stir and set aside.

In a large blender, combine the oats, baking powder, and sea salt. Pulse for 10-15 seconds to create oat flour.

Then add in the soy milk (which will have curdled into “buttermilk” by this point) apple sauce, coconut sugar, and vanilla extract.

Blend until well combined and set aside.

Next, thoroughly grease a muffin tin with refined coconut oil (or oil of choice) and then fill each cup no more than half full.

Note: avoid greasing the muffin tin first. Doing it after you make the batter allows it to thicken slightly, which is good.

Top each pancake with whatever you like: blueberries, raspberries, banana slices, or vegan chocolate chips and bake for 15 minutes or until golden brown and fully cooked in the center.

Serve warm with maple syrup and if you want to make it even more fun, a drizzle of almond butter 🙂
