Protein-Packed Breakfast Acorn Squash:
1 medium acorn squash
2 teaspoons coconut oil
1/2 teaspoon cinnamon
2 teaspoons brown sugar
1 cup nonfat plain Greek yogurt, divided
2 teaspoons honey
2 tablespoons chopped pecans

Cheesy Ravioli Lasagna Bake:
½ pound ground chuck
½ pound sweet Italian bulk sausage
1 32- ounce jar Marinara Sauce
24 ounces Cheese Ravioli frozen or fresh, 30 ravioli
½ teaspoon Italian seasoning
16 ounces shredded mozzarella cheese
½ cup grated Parmesan cheese
Chopped fresh basil for garnish

Homemade Chicken Noodle Casserole:
1 tablespoon extra virgin olive oil
1/2 of a yellow onion, chopped
Kosher salt and pepper
4 tablespoons salted butter
2 cloves garlic, chopped
3 carrots, chopped
2 tablespoons fresh thyme leaves
1/2 teaspoon cayenne pepper
1 tablespoon all purpose flour
3 1/2 cups low sodium chicken broth
1 cup whole milk
1/4 cup fresh parsley, roughly chopped
2 eggs, beaten
3 cups cubed whole grain bread
2 cups uncooked egg noodles
1 1/2 cups cooked shredded or cubed chicken
1 cup crushed potato chips

Black Bean Soup:
1 1/2 tablespoons olive oil
1 large onion, diced
2 large plum tomatoes, chopped (about 1.5 cups)
2 teaspoons minced garlic (about 4 cloves)
2 teaspoons dried oregano
1 teaspoon salt, plus more to taste
1 teaspoon dried thyme
1 teaspoon ground cumin
1 teaspoon red pepper flakes, plus more if you prefer it extra spicy
1/2 teaspoon black pepper
3 16-ounce cans black beans, drained and rinsed
2 1/2 cups vegetable broth (or chicken broth)
Optional toppings: diced avocados, queso fresco, chopped cilantro, fresh lime juice, sour cream

Crockpot Spaghetti Squash Lasagna Bolognese:
1 pound spicy Italian sausage or ground beef
1 pound lean ground beef (or Spicy Italian Sausage)
1 small sweet onion diced
2 cloves garlic minced or grated
Kosher salt and pepper
32 ounce can peeled tomatoes
1/4 cup tomato paste
1 teaspoon oregano
1 bay leaf
1 cup whole milk
1 medium to large spaghetti squash rinsed
8 ounces burrata or mozzarella cheese
Grated Parmesan cheese for serving

One-Pot American Goulash:
1 pound lean ground beef
1 teaspoon kosher salt
1 tablespoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon crushed red pepper flakes (to taste)
1/2 teaspoon black pepper
1 (15-ounce) can tomato sauce
1 (14.5-ounce) can fire roasted diced tomatoes
1 cup beef stock
8 ounces uncooked pasta
2 cups shredded mozzarella cheese

Plant Based Pumpkin Pie:
Pumpkin Puree-
450g pumpkin
1 tsp cinnamon
Sprinkle of salt
Drizzle of olive oil

Crust-
150g all purpose flour
½ tsp sea salt
1 tbsp coconut sugar
50g coconut oil (solid)
3-4 tbsp ice water

Pumpkin filling-
200g soaked cashews
350g The Coconut Collaborative Natural Coconut Yogurt
110g maple syrup
2 tbsp coconut sugar
1 tbsp cinnamon
½ tsp sea salt
1tsp vanilla extract
4 tbsp arrowroot powder
