– Hashbrown Casserole:
32 oz. frozen hash browns, thawed
½ cup butter, melted
10.5 oz. cream of chicken soup
16 oz. sour cream
1 small onion, finely diced
2 cups cheddar cheese, grated
1/3 teaspoon pepper

– Twice Baked Potato Casserole:
5 lb russet potatoes
1 (3 oz) package bacon bits
8 oz cream cheese
1/2 cup butter
1 cup sour cream
2 1/2 cup grated cheddar cheese
2 tsp salt
1/2 tsp pepper

– Sweet Potato Casserole:
Sweet Potatoes:
3 1/2 – 4 pounds sweet potatoes
4 tablespoons (1/2 stick) unsalted butter
3/4 cup packed light brown sugar
1/2 cup heavy cream
1 teaspoon kosher salt
1 tablespoon pure vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Topping:
2 cups mini marshmallows
1/2 cup all-purpose flour
4 tablespoons butter unsalted butter
6 tablespoons packed light brown sugar
1/4 cup old fashioned rolled oats
1/4 teaspoon ground cinnamon

– Vegetable Casserole:
16 oz package frozen cauliflower, thawed
16 oz package frozen broccoli, thawed
8 oz canned sliced water chestnuts, drained
8 oz canned bean sprouts, drained
10.5 oz can cream of mushroom soup
1 cup mayonnaise
1 yellow onion, diced
2 eggs beaten
1 tsp salt
Dash of Pepper
8 oz cheddar cheese, grated
8 oz mozzarella cheese, grated

– Brussels Sprouts Gratin with Butternut Squash:
24 oz brussels sprouts
20 oz butternut squash
2 tablespoons olive oil
1 1/2 tablespoon unsalted butter
1 teaspoon dried sage leaves (crumbled)
1/8 teaspoon nutmeg
3/4 teaspoon salt
1 1/2 tablespoons all purpose flour
1 cup 2% milk
1 1/4 cups shredded cheese (divided)

– Southern Squash Casserole:
1 tablespoon extra-virgin olive oil
1 tablespoon butter
2 pounds yellow summer squash (about 6 medium squash)
Salt & freshly ground black pepper, to taste
2 cloves garlic, minced
1/2 cup sour cream
1 egg, beaten
1 cup (4 ounces) shredded sharp cheddar cheese
1/2 cup freshly grated parmesan cheese, divided
18 golden butter crackers, finely crushed (about 3/4 cup cracker crumbs)
2 tablespoons butter, melted

– Southern Macaroni and Cheese:
1 pound box elbow macaroni
3 1/2 cups sharp cheddar cheese, shredded (reserve 1 cup for topping)
1/4 cup butter, softened
1 1/2 cups whole or 2% milk
3 eggs, beaten
1/2 cup sour cream
1/2 teaspoon salt

– Cheesy Hash Brown Chicken Casserole:
2 (20 oz) bags shredded hash browns
2 cup shredded colby jack cheese
1 tsp salt
3/4 tsp pepper
2 cup sour cream
10.5 oz can cream of chicken soup
1/3 cup milk
1 lb cooked shredded chicken
2 cup crushed corn flakes
3 tbsp butter, melted

– Corn Casserole:
14.75 oz. creamed corn
15.25 oz. whole kernel sweet corn, drained
8 oz. Jiffy corn muffin mix
8 oz. sour cream
½ stick butter, melted
1 cup cheddar cheese, shredded
