Greek Stuffed Tomatoes || Yemista || Quick & Easy || Dinner Recipes

Hey everyone! Today I wanted to share with you my YiaYia’s recipe for this delicious Yemista which is Greek for stuffed and we are stuffing vegetables.
The mixture is incredible! It has rice and a ton of fresh vegetables, it has ground beef which is optional if you wanted to keep these vegetarian.

10 vegetables total
bell peppers
zucchini or eggplant
*hollowed out

1&1/2 cups short grain rice
1/2 onion
1/2 bunch mint
1/2 bunch parsley
1 cup chopped zucchini
drizzle olive oil
1 teaspoon pepper
2 teaspoons salt
2 teaspoons oregano
2 cloves garlic
1 bunch green onions
Hollow out the tomatoes, zucchini, bell peppers and eggplant if using.
Place them into a large shallow baking dish.
In a bowl, combine all the mixture for the filling and mix well.
Stuff the vegetables with all the filling and place all the tops back onto the vegetables.
Season the vegetables on top and potatoes.
1 cup water and drizzle of olive oil goes on top before baking
and add a few potatoes if desired.
*Bake for about 2 hours, cover with foil for second half of baking time.
Rice should be very tender inside when done.
