2 globe eggplant cut into ½ inch slices
4 roma tomatoes, cored and sliced in half
3 Tbs extra virgin olive oil
4 Ciabatta rounds
1 tsp red pepper flakes
1 clove garlic, minced
2 Tbs fresh basil, chopped
1 Tbs balsamic vinegar
Pinch kosher salt (less than 1/8 teaspoon)
4 (1oz.) slices part-skim mozzarella cheese
2 Cup fresh arugula

Brush eggplant and tomatoes with 1 Tablespoon of the olive oil and grill until done (about 4 minutes on each side). Grill Ciabatta roll just to freshen it up. Toss the eggplant and tomatoes with the remaining olive oil, red pepper flakes, garlic, basil, balsamic vinegar, and salt. Place the Eggplant and Tomatoes on Ciabatta bread, top with Mozzarella and fresh arugula.
